Jacob Ledesma

President & Co-Founder

Jacob, the Executive Director for Moon Gardens, is a LEAN Certified Green Belt with Hawaiian Electric.  Attaining this certification has taught him and continues to teach him ways to continuously improve a process. The universal application of this concept is something he utilizes in his company-North Shore Coffee Roasters, for the day to day operations of Moon Gardens and the programs it offers to the community. His years managing a farm demonstrated the strong connection between the ʻāina, one’s environment and their health. Jacob enjoys helping people continuously improve in caring for their health and that of the community and environment at large.

Rita Madden MPH, RDN

Vice-President & Co-Founder

Rita, the Program Director for Moon Gardens, since 2001, has been sharing a sustainable approach to health and wellness that allows one to celebrate their culture and traditions and find joy in caring for health. She is host of the podcast “Food, Faith, and Fasting: Ancient Ingredients for Modern-day Health” which was a prelude to her book, Food, Faith, and Fasting: A Sacred Journey to Better Health. In the past she enjoyed teaching at the university level; her current areas of focus include being the Nutrition Director of the company Mediterranean Wellness, leading training sessions for physicians and other health-care professionals and conducting Wellness Workshops for a variety of audiences locally and throughout the mainland. Her soul is attached to serving the people of Hawaii, and because of this, she was grateful to help in the development of the New Keiki program: a lifestyle program that worked with families to bring nutritional conditions of children and adults into management. She is devoted to helping people create a healthy relationship with food and health.


Drawing upon our strengths, we are beginning this endeavor with a focus on nutrition and wellness.  Through conducting Wellness Workshops we are able to pursue our mission; to provide individuals with educational experiences that will enhance their personal health thereby allowing them to share within their community, which in turn leads to healing our environment.  As just like the ocean and birds, we as humans are also a part of the natural environment.
